It’s been a long-time favourite snack in South Africa, and beef biltong has now grabbed the attention of British snackers, too. It’s chewy, savoury and intensely meaty, making it an excellent partner for a cold beer or glass of chilled wine. If you’re familiar with beef jerky, you’ll have a bit of an idea of what biltong’s about. Coombe Farm Organic beef biltong follows a method and recipe that’s pretty true to the South African original. As well as salts (needed to draw the moisture out of the meat) we add a well-balanced blend of spices to the curing mix. Coriander seed and nutmeg add earthy undertones, while black pepper, cloves and chilli bring a hit of aromatic heat. Though you’ll taste the spices they won’t overwhelm the beef – it remains the star of the show.

Though it is a delicious snack food that makes a welcome addition to a lunchbox, beef biltong can be used in lots of different ways. Add it to a hearty stew for extra richness and depth. Or combine it with salami, prosciutto and chorizo on a deli board, alongside tart goat’s cheese, grapes and olives. Biltong served with drinks makes a surprising but satisfying nibble that’ll give your guests something to talk about. Enjoy it with a zesty sauvignon blanc or fruity-spicy pinot noir.
