As well as making our teriyaki biltong delicious, we also make it healthy. It’s naturally packed with protein and, as cured meat retains more nutritional value than its cooked equivalent, it’s offers a good hit of vitamins and minerals. The texture of biltong comes from the muscle of the silverside. This is a hindquarter cut from the beef carcass and, as a hard-working muscle, it has open fibres that soak up flavour. After the salt and spice cure has drawn moisture out of the meat the process of dehydration is completed in a drying room. This ensures even drying and a maximum concentration of meaty-spicy flavour.
The sweet-saltiness of our Teriyaki biltong makes it a perfect choice for on-the-go snacking when your tummy’s rumbling. But it’s sophisticated enough to put in an appearance on a charcuterie board alongside other cured and smoked meats, creamy cheeses and sharp pickles. Try it as a nibble to serve with cocktails – a sharply sour mojito makes a surprising pairing – or go for a glass of full-bodied Rioja to wash it down.
